Choco Chip Spotties


I am making some cookies to sell at Caremart for the Christmas season. Started making some with a friend 2 Saturdays ago. Here is the recipe, gotten from the Kelogg's Recipe Book.
   
Ingredients:
A)
150g Butter 
150g Castor Sugar (or icing sugar) [I use 100g as I find 150g is too sweet]
1 egg
1 tsp vanilla essence
Sieve
1 1/2 cups self-raising flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
 
B) Mix Together
100g white chocolate (chopped)
1 cup chocolate chip
2 cups Corn Flakes crushed
1 cup almond chopped
 
Method
- Cream ingredients in A till light and fluffy
- Add in egg and vanilla essence and beat for 1/2 min
- Fold in sieved ingredients (I replaced 1 cup of coco powder to self raising flour)
- Mix in all the ingredients
- Mix in all ingredients in B to form a dough
- Bake cookies in a preheated oven at 175C for 15mins or till golden brown

2009 Birthday..

A friend asked me on Sunday, what is your birthday resolution for this year? I paused for a while and said.. err.. nothing in particular I told her. What is my resolution? Its for me to know and you to find out.. :)

(I finished everything before I could take photos of it.. hahaha)

Reflecting to the events that happened, I felt very blessed. To have friends that care, and remembered my birthday! Thank you everyone for your thoughts. Love you all! 

Cristang Restaurant @ Sekseyn 8, Petaling Jaya

My fellow good friends took me out for my birthday lunch on Sunday, they told me, don't drive to church on Sunday, we will fetch you to a place for lunch. No, they didn't blind fold me, after about 20 minutes drive we reached the restaurant that is located at Seksyen 8 near PJ Hilton. This restaurant serves famous pork burger and also some Portuguese dishes. I was quite excited as it is quite rare to find a place that serves nice pork burgers. While waiting for the rest of my friends to arrive, we ordered our food first. 
Bacon & Egg Soup
When I saw this in the menu, it caught my attention. So we ordered for sharing, the soup is tasty with lots of bacon and a poach egg
The Urban Legend
This is the chef recommendation so I ordered this not knowing how the burger will look like. The pork patty is about 2cm thick, topped with minced pork meat & petai, cheese, a slice of back bacon the rest of the condiments are lettuce, tomato, pickle and onion. The patty is tender and juicy, the minced pork though added petai, but can't really taste it, the combination is really good. Not forgetting the wedges, they were yummy too!   
Pork Ribs Ambila
This is a Portuguese dish. The taste is quite unique, don't really know how to describe it but it tasted good. :)
Rendang Wild Boar
This weekend special. This dish is the only not so nice one, the taste is so so only but the meat is quite tender.

Carbonara Bacon & Fungi
This is super yummy and the fact that I like Carbonara! Comes with generous serving of bacon & mushrooms! 
Portuguese Baked Fish
The fish is tasted okay, I think I was so overwhelmed by the burgers that I did not really pay attention in tasting this. I shall check with my friend who ordered this and will update later with her comments
Aglio Olio - Cajun Bacon
My sister ordered this. Tasted good with the spices and generous serving of ham & bacon! 
Cristang Fried rice with Pork Vindaloo
The taste of this is quite unique, with spices. Pork Vindaloo originate from Goa, India. Also comes in chicken Vindaloo
Ceasar Salad with Cajun Chicken Strips
Tasted good with 'real' bacon bits. 
P3 Pork Burger
Serves with Pork Chillis. The Chillis tasted good, nice combination!

Lemon & Lavender Cookies


I found an interesting recipe one day in a blog call Happy Home Baking, it's call lemon & lavender cookies. I thought it's quite easy to make so I tried it last night. 

The recipe:
Ingredients:
7 ounces (14 tablespoons) unsalted butter, softened at room temperature
3/4 cup icing sugar
1 egg yolk
pinch of salt
1 tablespoon dried lavender
zest from one lemon
1.5 cups & 1.5 tablespoons plain flour
3 tablespoons cornstarch
Method:



  1. Sift flour and cornstarch, set aside.
  2. With an electric mixer, beat butter on medium speed until smooth, add icing sugar and beat until well blended.
  3. Beat in the egg yolk, followed by salt, dried lavender and lemon zest.
  4. Add the flour mixture and blend with a spatula. Mix just until flour is incorporated.
  5. Gather dough to form a ball, divide in half and wrap each piece in plastic wrap. Chill dough for 30 minutes in refrigerator.
  6. Form each piece of dough into a log that is about 1 to 1 1/4" in diameter. Wrap logs in plastic wrap and chill dough for at least 2 hours in refrigerator or leave overnite. (Dough logs can be wrapped airtight and kept refrigerated for up to 3 days or stored in freezer for up to 1 month.)
  7. When ready to bake, preheat oven to 170 degC. Once the oven is ready, slice the log into 1/4" thick and place on a lined baking sheet with 1/2" interval.
  8. Bake for 12-14 minutes or until the cookies are set but not brown. Transfer to wire rack and let cool completely.

I let my sis try the cookies after it was cooled down, she said it tasted nice but just need some time to accept the Lavender taste, as most of the time we use Lavender as potpourri or in our shower gel or hand wash. I find it quite refreshing, with a tinge of lemon zest taste.

A Blinded Affair

One of my care bear was asking me which of the weekend nights I am free cause she wanna take me out for my birthday dinner. After a few suggestion, we settled for the 15th. She said, please get ready by 6.45pm and one of our 'dutt-dutt' car will come and fetch you. Then I asked her, where are we going, how should I dress and stuff. I was asking so specific that she nearly wanted to kill me, ahaha.. 

I didn't know what to expect after what they did for me for my birthday last year, they made me cry! It was tears of joy, surprise, and a touched heart.

Anyways, the dutt-dutt car came at 6.40pm, so I got into the car not knowing what to expect. They asked me to take the back seat, and buckle up, so I followed, then they passed me an eye mask and say 'nah, you can either put this on yourself or we put for you'. I chose to put it on, on my own. To cut the long story short, I was in this 'condition' till I reach the destination. I could tell where we were going until a friend called and I lost my directions. I told myself, oh well just relax and be surprised. 

The journey to the destination seems to take extremely long, I think we reached the place about 20minutes. Then comes the scary part, I had to walk blind folded. I was just telling them that I always do this to people and now finally I experience this on my own. They hold my hands while I walked, telling me what to do. I felt so insecure then.. 





I really had no idea where I was, while walking, I told them, I smelled charcoal. I heard many foot steps around me, feeling quite embarrassed, I know there are people walking around me. They pull a chair for me and I sat down, and they allow me to take off my mask.

I saw the swimming pool before my eyes and the rest of my care bears there. The swimming pool is at one of my care bear's place. Then the organizer said, we organised a BBQ party for you. They handed me my birthday cake and sang birthday song to me.

Everyone went back to their respective positions, some BBQing the food, and others prepare to eat. I was told to just sit down and I will be serve with food and drinks. I hear that they started the preparation at 6pm, I was so blessed to see them working together for this. Building a better bond and friendship together.




The famous fried rice by my friends dad, she said she added the Chinese sausage cause I like them! Thanks!


Here is the pool side, I hear that it's quite a popular place for BBQ and rather difficult to book during weekends

I had a wonderful time that night, a big thank you to all my friends for putting this together for me. This will be yet another unforgettable birthday experience.  Last but not least, really thank God for hearing the prayers of His children, for not raining!
